Porky's BBQ was founded by husband and wife team Joy and Simon Brigg after the duo had managed Camden’s Fogg's Restaurant for eight years.
The duo decided to launch Porky’s after a holiday road trip across the US led to the couple eating ‘the best BBQ food they had ever tasted’ whilst in Memphis.
After returning home they noticed the market was shifting towards casual dining, and it seemed a no-brainer to reinvent the Camden restaurant as a Memphis themed diner.
Things went well and they started looking for more sites soon after, falling upon a shell project in Bankside opposite the Globe Theatre which was followed by a second site at BOXPARK in Shoreditch.
Since opening three years ago, they now boast five sites in London, including Camden, Bankside, Shoreditch, Crouch End and the recently opened restaurant in Chelsea.
Now with the sites turning over £3m per annum, they are looking to open two more restaurants with the launch of an ambitious crowdfunding campaign which aims to raise £650,000.
Simon told BQ: “We have been overjoyed at how successful BBQ has been in the UK. It has transported incredibly well from the US and I am sure it is here to stay.
“We have been overwhelmed by the support of our customers and thought it would be a great way to raise money by giving them a chance to have their own piece of the business.”
Porky's BBQ has been totally self-funded to this point. By welcoming investors into the organisation the duo hope to triple the size of the business within the next three years.
This will see the business operating across 12-15 sites. From there, they would like to grow the business nationally and, who knows, maybe internationally.
