Olive Tree Brasserie looks to the crowd

The Olive Tree Brasserie group has turned to crowdfunding in a bid to raise £100,000 to open a third restaurant in Chester.

Entrepreneur Dean Wilson already manages two restaurants in Preston and St Annes and is now hoping to bring the popular Greek cuisine and cocktails to Chester.

Wilson has turned to crowdfunding platform Kickstarter to launch the campaign and had so far raised £2,875 at the time of writing with 18 days remaining.

He said: “There are plenty of Greek restaurants in the south of the country but there’s just not enough choice for modern Greek food in the north.

“I feel very lucky to have received so many messages of support for this project. It’s something I hope fuels lots of interest as we look to support and develop the team whilst providing Chester with a truly wonderful dining experience.”

After working in hospitality all his working life, Dean launched the Olive Tree Brasserie eight and a half years ago and the company is continuing to grow.
