ONE of York’s chefs will be sharing his skills with food lovers at a series of culinary masterclasses.
Josh Overington, chef patron of Le Cochon Aveugle, at Walmgate, began running classes earlier in autumn and demand was so high a further five have now been planned.
Each class will be held on a Sunday and will focus on a different topic, designed to be replicated at home, starting on Sunday 27 January with wild game and butchery.
This will be followed on 24 February by a class on creating the perfect Sunday lunch and, on 24 March, participants will be shown how to perfect a three-course meal with matching wines.
On 28 April, the topic will be fish cookery, with Josh demonstrating the correct way to fillet, prepare and cook fish and shellfish and the final masterclass, on 19 May, will put the focus firmly on classic French cuisine.
Le Cochon Aveugle has won widespread praise for its imaginative tasting menu, which changes regularly, depending on the seasonality and availability of ingredients.
However, one constant feature of the menu is Josh’s signature bread and participants at each class will be shown how to prove, shape and fold it before baking a loaf to take home.
“Along with an opportunity to learn new skills and techniques the classes are fun and informal,” said Josh.
He continued: “If you love food and like cooking then it’s a great way to spend a day – learning from each other, making friends and discovering that techniques you thought might be too tricky are, actually, perfectly achievable.”
The classes will start at 9.30am for coffee and introduction, before the morning session and there will be a break for lunch and a glass of wine, or two, before the afternoon session, which will finish at around 4pm.
